I use this very simple one and for some reason people love my potato salad:
Peel 3 medium potatoes
Rinse them off and stick them in already hot water and boil them for 15 minutes or until they are soft, not falling apart just soft
Add two eggs to the water and allow them to boil along with potatoes.
Run cold water over them softly to get them to where you can handle them without burning yourself.
Place them one by one on a cutting board and slice the potatoes first length-wise (like making french fries-the first cuts) then in smallish squares (bitesize).
Get the two hard boiled eggs and run cold water over them then crack and peel and cut up in bite sized pieces
Next, place the bitesized potato pieces in a bowl where you squeeze at least 1 cup of mustard and 1 cup of mayonnaise (depending how tart you want it). Add the eggs.
Then sprinkle salt and pepper to taste.
You can add Celery bite size pieces and onion bite sized pieces.
you can serve it warm, but I prefer cold for some weird reason. It kicks butt, try it!

Sure- I've got a good one- easy too. You'll need an equal amount of potatoes and eggs. Figure 1/2- 1 potato per person, depending on how much that person eats! Peel the taters, dice to about 1/2 inch (don't be perfect) and place them and the eggs into a BIG pot. Cover with cold water- probably jut to 1/4 inch or so over the potatoes and eggs, then boil until potatoes are just soft but don't fall apart. Drain, pull out the eggs and put them in ice water to cool quickly, and set taters aside. In the mean time you can get creative with it! I like to add chopped cucumber( the english- or seedless variety that is usually wrapped in plastic. I like this because the skin is thinner and easier to chew so I can leave it on for extra color in the salad), frozen defrosted peas, ham and green onions. I think it makes a really good combo, but anything you like would probably be good too. How about chopped olives? Or even steamed brocolli? Red onion? It's a blank canvas really! I'm not going to give you amounts here though- only you know how much you would prefer.
Anyway- once you have all your ingredients chopped and ready, including the eggs- you can just chop the stuff and throw it into a BIG bowl with the taters- I like to add salt, pepper and dill. Lots of dill! For a big batch (10 potatoes or so) I use about 1 1/2 tablespoons. It's your decision here too- miracle whip or mayonnaise (I like miracle whip.) I never measure it though, just add it until I have enough. If you like mustard- add that too. It's a very customizable recipe! Hope it turns out great for you!

My brother is the potato salad and barbeque KING! lol ...
You would never believe some of the stuff he uses as ingredients, but people can't get enough of his food!
His secret ingredient in potato salad is none other than boiled TURNIPS. No lie ... it's awesome! Down here in Cajun country, we don't really follow recipes. Just a bit of this and a bit of that! But here's a list of stuff for ya ...try it and don't let out the secret! lol ....
pot full of peeled, red (or new) potatoes and a few turnips ... boil them till soft
big spoon of butter ... mash slightly at this point, then salt to taste
spoon of mayo, mustard (more or less to suit)
several boiled eggs, chopped up (optional)
cut up sweet pickles, or relish, or dill pickles ... whatever!
a little bit of sugar and black pepper
Mash everything together and add milk till you get the consistency you want. Some people like smooth salad, which you beat with a mixer. Some just like it mashed and slightly lumpy. You choose!

Boiled potatoes, peeled and cute into bite size pieces. Mayonnaise and just the smallest amount of mustard (only enough to cover the potatoes, don't make it soupy). Add salt and pepper lightly! Options: I chop celery into mine, some like green onions, radishes or relish (I don't care for a lot in mine). Mix well, chill. I garnish with a hard boiled egg and paprika. Simple, yet very good!

What you need:
3 potatoes, peeled and quartered
2 teaspoons salt
4 tablespoons creamy salad dressing (e.g. Miracle Whip)
salt and pepper to taste
What you do:
Place potatoes in a medium saucepan with enough water to cover. Add 2 teaspoons salt. Bring to a boil; cook until tender, about 15 minutes. Drain, and allow to cool until easily handled but still warm.
Cut potatoes into bite size pieces, and transfer to a medium mixing bowl. Add salad dressing, and gently stir until well coated. Season with salt and pepper to taste. Serve warm.

Pinch dried oregano
Pinch fresh chervil
Salt and pepper
3 potatoes -- cooked, peeled, and
-- cubed
8 cherry tomatoes -- quartered
8 strips crisp cooked bacon -- crumbled
1/2 cup chopped green onions
1. In a bowl, mash the eggs until smooth. Add the Cottage Cheese Dressing,
sour cream, vinegar, mustard, oregano, and chervil, and season with salt and
peppe and toss to mix. Add potatoes, tomatoes, bacon, and onions and toss
again until coated.
* COTTAGE CHEESE DRESSING:
1 carton {12 oz.} large-curd cottage cheese
1/2 cup mayonnaise
2 tablespoons snipped chives
2 tablespoons chopped green bell pepper
1/4 teaspoon garlic powder
In a blender, combine the cottage cheese, mayonnaise, chives, bell pepper, and
garlic powder and process until smooth. Transfer to a bowl; cover and chill
for at least 1 hour.

Curried Potato Salad
1 kg potatoes, diced & boiled
1 med onion, finely chopped
salt & pepper
Dressing
1/3 cup mayonnaise
¾ cup sour cream
2 tsp curry powder
Cook potatoes until just tender, cool. Add onion & salt & pepper and gently fold in dressing which has been mixed together.
GARLIC-ROASTED NEW POTATO SALAD
(Serves 8 to 10)
Five pounds small red new potatoes
Six cloves fresh garlic, cleaned and finely diced
One and one-half cups chopped red bell pepper
Two cups of mayonnaise, preferably Hellman's brand
One and one-half cups sour cream
Three tablespoons minced parsley
One-half cup chopped scallions
One teaspoon sea salt
Pepper to taste
Wash the red potatoes. Bring to a boil in salted water until tender,
about 15 minutes.
Cool, then cut into one-inch chunks.
In a large bowl, combine mayonnaise, sour cream, garlic, parsley,
scallions, red pepper. Mix well.
This dressing should be smooth. Gently fold in the potatoes.
Season with the salt and pepper to taste.
Refrigerate for 60 minutes before serving.

My mom happens to make the best potato salad ever. I can tell you whats in it, but not sure of the quantities, I would have to say equal parts though.
Potatoes (of course)
Mayo
Celery
Eggs
Salt/Pepper
Bacon and bacon greese (makes it all stick better)
Fresh Sage/ Rosemary spriggs

I use red potatoes with the skin on and add mayo, chopped green onions, chopped green salad olives, garlic and Cajun seasoning. The amounts of each can vary, depending on what you have on hand, and your mood. It's very simple, but very colorful and delicious.

first you need to tell us if you like it sweet or not. b/c i don't like potato salads that have relish, mustard...you know sweet tasting. but i have an awesome recipe. it has potatoes of course, minced onions (optional), imitation crab meat, mayo, and salt and pepper to taste. never had a person try it that didn't like it.
