Made a Blueberry Buckle tne other day. It's a coffee cake baked in a 8x8 pan, with a struessel topping. It rises so light and fluffy, and it's easy to make.
About cleaning up-Martha Stewart would tell you to clean up as you go, waiting till the end makes it harder! LOL. Got the right clean-up equipment? Grease buster soap? I bought a brush that you put soap in the handle and it dispenses automatically. Easy dish cleaning up[just so not leave it with the brush lower than the handle, or you get a really clean counter, too. ] LOL.

Hey you are cooking....if you love pasta too!
Since summer is here tonight we had pasta salad, made with Italian kidney beans cannelloni beans, penne pasta ...sun dried tomatoes, black olives , red onion, fresh basil and a oil and vinegar dressing.
fried fish the type is "talapia" it's firm and so mild and so thrifty on the wallet. The fish is dipped in buttermilk first then in the cornmeal and spices before frying......
dish of cucumber slices and onion in a vinegar dressing.
dish of pears for dessert with gingersnap cookies
simple and good....tomorrow it is on to more cooking..what else is new? lol....

Since I am Filipina, I generally like to cook Filipino food like Afritada (Stewed Chicken & Pork with Tomato Sauce) Adobo (Chicken & Pork cooked in soy sauce, vinegar, garlic, onions, pepper & bay leaf), Sinigang (a local sour soup, generally with meat or fish), Nilaga (a clear soup with pork / beef & vegetables), Lechon Kawali (crunchy fried pork) and Tinola (a clear soup with chicken & vegetables).

On special occasions, I also cook Spaghetti Bolognese.

Btw, as I have OC (Obsessive Compulsive) tendencies, I generally like cooking and cleaning up. I even clean up while I cook. Weird, but so true. :)

Half tomato sauce and half alfredo sauce makes a really good tomato cream sauce.
