Wine is the product when one ferments a liquid containing sugars (be the from fruit, vegetables, or cane sugar) with yeast. Sake is also wine (the starches in rice are first modified to sugars with amylase - an enzyme - and then are able to be fermented by the yeast.

Spirits are basically the distilled version of the above (or distilled beer in the case of whisky). The liquid is heated, an alcohol-water mixture is the steam. This steam is then condensed in a cooler and collected. That is your spirit. This is a very simplified answer - distilling is not something you want to do in your kitchen! Aside from being illegal inmost countries, if it is not done properly, the end product can be extremely hazardous to your health.

Martini, by the way, is actually wine in which a variety of herbs (e.g. artemesia absinthium) and fruits (in the botanical sense) have been steeped. Then the filtered liquor is fortified with spirits.
