excellent idea..you can go light on the pastrami and it still works..never skimp on the swiss or sauerkraut

without the sauerkraut it cannot be a Reuben..believe me there was a time when i couldn't even look at sauerkraut..it fits so nicely with the other flavours

Yes, just last week. I agree you can go light on the meat but add extra cheese , sauerkraut and dressing.
