I have a graph template that I scanned and saved in jpg format. how can I convert it to a text format to use in word or excel? Is there another format that would be easier to save in , then convert to a text document?

You need an OCR. There are some that will convert jpg to Word if you have a scanner rescan and choose word.

Just open Ms Office and Import the image into it! Then save it as doc, or xls... You might try pdf as well!
