Irish Potatoes

5 or 6 tablespoons softened butter
1/2 cup light Karo syrup
1/2 teaspoon salt
1/2 teaspoon vanilla
3 & 1/2 cups confectioner sugar
3 & 1/2 cups flaked coconut
cinnamon for rolling
Mix first four ingredients. Add confectioner sugar and coconut and knead until shiny. Roll small amounts in your hands to form potatoes. Remember potatoes are not perfectly shaped! Roll your potatoes in a dish of cinnamon. Roll a second time for extra dirty potatoes. Do not refrigerate mixture. Note: If you find a green Irish potato mixed in, a leprechaun has visited to bring you good luck and sometimes a pot of gold!
IF YOU MEAN JUST HASH BROWN POTATOES....... this is another way to cook them..... there are many ways for hash browns also

Original recipe yield: 4 to 6 servings.

INGREDIENTS:
10 cups large chunks of peeled potatoes
8 slices bacon
3 large onions, sliced
1 1/2 teaspoons salt
DIRECTIONS:
Place potatoes in large pot. Fill the pot with cold water until it is half an inch above the top of the potatoes. Add the salt to the water and stir briefly to dissolve. Bring water to a boil and cook until tender, about 15 to 20 minutes. Drain and set aside to cool.
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon, drain, cool and crumble. Leave bacon fat in skillet and return to stove.
Add potato chunks, onion and crumbled bacon to skillet. Cook over medium high heat until potatoes begin to brown and onions are translucent, about 25 minutes.

This is a quick and easy way to make hash browns.
Hash Brown (or Rosti) Potatoes
1 pound medium moisture, yellow-fleshed potatoes, such as Yukon Gold
2 tablespoons unsalted butter
1 tablespoon vegetable oil
Salt and Pepper to taste.
Wash and peel potatoes. In a large food processor, fitted with the shredding disc, shred the potatoes. Potatoes may also be shredded by hand using a grater.
Transfer to a large bowl and season with salt and pepper, tossing mixture with a fork.
In a 9 to 9 1/2-inch nonstick skillet heat 1 tablespoon butter and 1/2 tablespoon oil over moderate heat until foam subsides.
Add potatoes, spreading them evenly and tamping them down with a rubber spatula to form an even cake. Reduce heat to moderately low and cook rosti until underside is golden brown, 10 to 12 minutes.
Slide hash browns onto a large plate. Invert another large plate over potatoes and invert potatoes onto it. (Browned side of potatoes should be on top.) In skillet heat remaining tablespoon butter and 1/2 tablespoon oil over moderately low heat until foam subsides. Slide potatoes back into skillet, browned side up, and cook until underside is golden brown, 10 to 12 minutes. Slide hash browns onto a serving plate and cut into wedges.

Irish Potato Omelet
(6 servings) Printable Version
6 Med to Large Eggs
1 Tablespoon Chopped Chives
1 Large or 2 Med Potatoes
1 Tablespoon Scallions
Lemon juice
Salt
1 Tablespoon Butter
Pepper
Boil potato (s) and mash.
Separate eggs yolks and egg whites.
Set egg whites aside.
Beat together the mashed potato and egg yolks.
Add a splash of lemon, chives, scallions and salt & pepper to taste. Mix all together.
Whisk egg whites until stiff and gently fold them into to mixture. Leaving as much air as possible.
Melt butter in omelet pan or frying pan. Cook the mixutre until golden then run it under the broiler to finish and puff it up. Serve at once.
A hearty and meatless mighty meal.
or for D E S S E R T
1 cup raw, grated potatoes
1 cup leftover mashed potatoes
1 cup all-purpose flour
2 tsp baking powder
2 tsp salt
2 eggs, lightly beaten
1/4 cup (about) milk to mix
Butter or oil for frying
Sugar (optional)
PREPARATION:
Place the grated raw potatoes in a clean cloth and twist to remove excess moisture.
Whisk together flour, salt, and baking powder.
Heat a heavy skillet over medium heat and add butter or oil. Drop potato batter by the tablespoon into the hot pan. Brown on both sides (about 4 minutes per side). Butter each boxty and serve hot with or without sugar.
Yield: about 4 servings

1 2 pound bag of Ore Ida potatos squares, the diced ones
1 medium onion, minced
1 small sour cream
1 can cream of chicken
1 stick of butter, melted
1 8 ounce bag of shredded cheddar cheese
Thaw the potatoes, mix the rest together (I also add salt and pepper) bake for 1 hour, maybe longer in a 9 X 13 pan at 350.
