Crockpot Breakfast Cobbler
2 cups peeled sliced tart apples
2 cups granola cereal
1 teaspoon cinnamon
1/4 cup honey or maple syrup
2 tablespoons melted butter (vegan of course, or leave out)
1. Spray inside of crockpot with nonstick cooking spray.
2. Combine apples, cereal and cinnamon in crockpot and mix well.
3. Stir together honey and butter and drizzle over apple mixture.
4. Mix gently.
5. Cover crockpot and cook on LOW 8 hours.
Vegetarian Cake
"This super-moist cake is packed with apples, carrots, potatoes, nuts, dried fruit and spices. It's almost a meal in itself! It's best served the day after it's baked."
Original recipe yield: 1 10-inch bundt cake.
INGREDIENTS:
2 cups all-purpose flour
1 tablespoon baking powder
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground allspice
3/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups peeled and shredded apples
1 1/2 cups shredded carrots
1 1/2 cups peeled and shredded potatoes
3/4 cup dried currants
3/4 cup raisins
3/4 cup chopped walnuts
1 tablespoon grated orange zest
3/4 cup butter, softened
1 1/2 cups brown sugar
3 eggs
2 tablespoons light molasses
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10-inch bundt pan.
Onto a sheet of waxed paper, sift flour, baking powder, cinnamon, allspice, baking soda and salt. Set aside. In a medium bowl, stir together apples, carrots, potatoes, currants, raisins, walnuts and orange zest. Set aside.
Place softened butter and brown sugar in a large mixing bowl. Beat at low speed until mixture is light and fluffy. Add eggs one at a time, beating after each addition, and then mix in molasses. Slowly beat until mixture is thoroughly moistened. Gradually stir in fruit mixture and continue to beat at low speed until well blended. Spoon into prepared pan.
Bake in preheated oven for 60 minutes, or until a toothpick inserted in center comes out clean and cake pulls away from sides of pan. Cool on a wire rack for 10 minutes, then remove from pan and cool completely.
European Muesli
I first enjoyed this scrumptious, nutty cereal in Germany and Austria, and more recently at the Naramata Centre in British Columbia, Canada. It's excellent mixed into fruity yogurt.
Original recipe yield: 8 cups.
INGREDIENTS:
1/2 cup wheat germ
1/2 cup sesame seeds
1/2 cup sunflower seeds
1/4 cup shelled pumpkin seeds
1/2 cup chopped cashews
1/2 cup chopped almonds
1/2 cup shredded coconut
1/2 cup rolled wheat
3 cups rolled oats
1/4 cup oil
1 1/4 cups honey
1 1/2 teaspoons vanilla extract
DIRECTIONS:
Preheat oven to 225 degrees F (110 degrees C). Lightly grease a large baking sheet.
In a large bowl, mix together wheat germ, sesame seeds, sunflower seeds, pumpkin seeds, cashews, almonds, coconut, rolled wheat and rolled oats.
In a medium saucepan over medium heat, mix oil, honey and vanilla. Cook and stir just until the mixture is hot. Stir into the wheat germ mixture.
Spread the mixture on the prepared baking sheet. Bake 1 1/2 hours in the preheated oven, stirring approximately every 20 minutes, until golden brown.

16 slices of bread (crust removed)
6 eggs
1/2 cup margarine
1/2 tsp. salt
3 cups milk
crushed cornflakes
1 tsp. dry mustard
1/4 cup each onions and green peppers, chopped
1-2 tsp. Worcestershire sauce
16 slices black forest ham
shredded cheddar cheese
Place 8 slices of bread in the bottom of large roaster or cake pan. Add ham slices and cheddar to cover. Top with 8 slices of bread.
Mix all other ingredients except cornflakes and margarine. Beat well, pour over bread and let stand overnight in fridge
In the morning, melt the margarine, pour over all and sprinkle with crushed cornflakes.
Bake at 350 for 50 minutes.

Depends on if you want a fun breakfast you may not want to eat, or something to eat. If you want the fun, place a few eggs in a microwave oven and turn it on high, sit back, and enjoy the show. If you want to try to eat the eggs, have your tried poaching them? Poached eggs are very good with toast.

half a pita filled with cottage cheese and fruit,
whole wheat english muffin with peanut butter and fruit,
2 whole wheat waffles topped with 2 tspns of wheat germ, honey or light maple syrup, 2 tbsps of cottage cheese and 1/4 cup fruit cocktail drained. This last one is my all time favorite.

try french toast
1 egg beat with cinnamon ane nutmeg(dash each)
put a slice of bread in the mixture and coat each side. then place in frying pan with little butter or oil and cook till golden on each side.
serve with syrup or jelly.

Poached eggs on toast or English muffins. (Eggs Benedict if you want to mess with the Hollandaise sauce)

Have you tried bulgar with dried fruit of your choice cooked in it?
Once cooked put in the bowl with brown sugar, butter or peanut butter or almond butter and enjoy
