Making London Broil

Beef Jerky
4 lbs london broil beef or flank steak
(the cheaper cuts of meat do very well too arm roast
english roast, rump all work)
6 teaspoons garlic powder
6 teaspoons onion powder
3 teaspoon liquid smoke
1/4 cup Worcestershire sauce
1/2 cup soy sauce or low sodium soy sauce
1/4 cup brown sugar
(optional) accent (MSG) optional
course cracked black pepper
First slightly freeze your meat, it cuts so much easier!
Always cut against the grain. (Opposite of cutting a steak) You actually want this to be tough and stringy. If you cut it with the grain it will fall to pieces.
1. Trim all fat off meat.
2. Cut steak in to 4 inch strips. (This is were the freezing helps)
3. The steak should be about 1/2 inch thick. (or a little less what you prefer)
4. Add all ingredients in large bowl.
5. Mix well.
6. Cover and refrigerate overnight.
7. (8hrs.) Place in the dehydrator don't let the meat touch.
Press cracked black pepper into top of beef lightly
so it will stay on and not fall off.
Rotate trays center out. (follow dehydrator instructions)
If you do not have a dehydrator, line cookie sheets
with tin foil.
8. Place steak strips on sheets,don't overlap meat.
Press some of the cracked pepper in to top of you meat so
it will stay put. To much will be to hot!!!
9. Set oven at lowest temperature.
10. 150-175 degree Bake six hours, turning after three hours.
11. This is done when meat is dried out, depending on your
oven.
Store in an air tight jar or seal with food seal. Will keep in a
zip-lock for a while. They usually eat it up pretty fast though!

EVER DEER SEASON I USE ON OF THE HAMS. Deer jerky is SO good too!!!! I've heard of turkey jerky but never had it. Just remember what ever cut or kind of meat you use cut it against the grain!!!!! This recipe is one I've used for years, you can tweak it to your own liking. Some like Teriyaki in stead of soy sauce, I do not!

Just the other day a kid at school gave me some Kangaroo jerky that he bought at an exotic foods store (which had imported it from South Africa) it was Buffalo Bob's Kangaroo Jerky. As far as making jerky goes, good luck.

Do a search for "beef jerky" (in quotes) recipes. I did and got too many results to go through.

this will work with any meat-slice very thin-1/4 inch works well-marinate in a container-i use plastic bags makes it easy to mix-for at least two days stirring and mixing a couple of times a day-then use a dyhdrator to dry it-think you will like the results-
marinade-equal parts soy sauce -dales steak seasoning or like store brand-half part worchester sauce-and liquid smoke to taste-chef for living-old hippie here-ps-for something different trade out the worchester sauce with honey
