Refer to it as "your generous gift" as opposed to the actual amount. Also, be sure to mention something you may purchase with it. "Thank you so much for the generous gift. It will really be helpful when it comes to paying off those student loans/ taking that vacation/ buying a professional wardrobe/whatever"

Well, I'll tell you what I wrote in mine. I thanked the people for their generousity, then i talked about what i would be doing this summer (working, vacation etc) then i talked about where i was going to college at in the fall. But it shouldn't be too long, just a short paragraph. Then in closings say "Again, Thank you very much."
