Chile Recipe:INGREDIENTS:
* 1 - kg beef roast
* 1 - 822g can of crushed tomatoes
* 1 - 283g can of Italian or Mexican crushed tomatoes
* 1 - 822g can of chili beans
* 2 - 283g cans of dark red kidney beans
* 1 - large white onion
* 3 - cloves of garlic (if 3 is good, 4 is better!)
* 60 mL - chili powder (fresh)
* 5 mL - crushed red pepper
* 5 mL - cayenne pepper (fresh)
* 5 mL - black pepper
* 15 mL - salt
PREPARATION:
Slice roast into 3.5cm steaks. Place steaks on a very hot grill. Sear 30 seconds on each side. Remove from grill. Place on platter and set aside until cool enough to handle.
Put beans and tomatoes in a very large pot or Dutch oven. Add spices. Coarsely chop onion and add to mixture. Begin warming over medium heat.
Shred steaks. I use a food processor with a shredding blade. Add meat and drippings from platter to pot. Let simmer until beans are tender. If chili is too dry use beer, not water. Salt to taste.
For best results, let the chile simmer for a few hours after it is done.
If you use really fresh spices this will be HOT!
We serve this over linguine topped with shredded cheddar cheese. If you eat it all at the first sitting, it will serve about 12 people. But keep it to yourselves, and you can have it again the next day--it's even better then!

I live in New Mexico and I can answer what chile is in the food category. REAL chili (in my opinion) is a type of pepper that is grown and picked in the state of being green - not very ripe, or red - being ripe.
The red or green doesn't effect how hot it is, either one can have different degrees of being hot and spicy. The flavor - not spiciness - is what differs red chile from green chile. I prefer the flavor of red chile over green... not sure I can explain why exactly. My father liked red chile over green because the green chile is slightly more likely to upset your stomache if it's picked too soon or not cooked enough.. something like that.
From its pepper form the green chili is diced and mixed with some other ingredients to be made in to a sauce-like mixture. Red chile is ground in to a powder and also mixed with other ingredients in to a sauce-like mix. Though we don't call it a sauce, here it's just called chile. It is then poured over foods like burritos, enchiladas, stuffed sopapillas - and you're not gonna believe this - turkey at thanksgiving. It was bizarre and wrong to me too.. but man it was sure good when I tried it. My family makes great homemade chile!
Conversly, in Texas, chile is a mixture of ground beef and beans. This is a generic and un-authentic food and should not share the name chile. I find it generic and highly lacking in spiciness. Though I'm sure several will disagree with me, and that's ok. I'm accustomed to spicy food.
Important note:
Chile is primarily an invention in the US, more so in New Mexico and is technically "New Mexican food." We have real Mexican restraunts out here run by real Mexicans (glad I remember some spanish) and chile in the "Authentic" Mexican restraunts generally isn't served with meals.

a country and a red pepper dryed and ground up to flavor foods like chile powder is a mix of common spices used for a sauce like a salsa or a soup like the classic chili it contains garlic and cumin and oregano and redpeppers and its like this take some cubes of round steak or trimmed chuck and brown with some oil about oz of olive and then add a tblspoon of sugar and finish the browning add some canned sauce or mashed tomatoes or puree or paste add two tblespoons of the chile powder the add some canned black beans and red kidneys and a hand ful of diced onion slow simmer it and make some sweet corn bread then go nuts
