I just use a sugar cookie roll on a pizza pan... bake it according to the directions on the package.
My icing is a tub of cool whip, a block of cream cheese, and powdered sugar to taste however sweet you'd like it. Very basic.
And whatever fruit is in season or is requested.
I make one for every gathering I go to and it's always the first thing gone.

First I make the sauce. I use one can of diced tomatoes and add 1 teaspoon of lemon juice, one teaspoon of lime juice, a pinch salt and a pinch of pepper. Stir well. Cover a pre-made pizza pie shell with the sauce. Next sprinkle evenly on top of the sauce two cups of mozzarella cheese. Then top it off with 1 cup of cubed pineapple, 1/2 cup of kiwi thin slices, and 1/2 cup of peeled and thinly sliced orange pieces. For cooking time follow the directions listed on the pizza pre-made shell.

Outspoken is correct, only thing I would do differently is after you assemble the fruit pizza, melt 1/2 cup of apple jelly and brush over the top for a shiny glaze...yum!

Use a simple pizza crust (I think Pillsbury makes one). Spread cream cheese on it first. Then you can use whatever fruits you like. We use:
Strawberries
Blueberries
Pineapple
Melons
Grapes
Kiwi

I take pita bread and spread yogurt (plain or strawberry) on it. Then put berries, apples, sometimes kiwis, & top it with some cool whip & granola. You can put any kind of fruits on it. You can also bake the pita bread first with butter & cinnamon.
