S'mores are the traditional campfire dessert--I've never had them but I think you put a big marshmallow and a piece of chocolate between 2 graham crackers, put it on a skewer or a tree branch or something and heat it over the fire.

Take a banana and peel back a strip of the peel about 1 in wide down the inside of the curve. Cut a slit into the banana lengthwise. Stuff it with some miniature marshmallows, drizzle with chocolate sauce, replace the peel, and wrap the whole thing up in a piece of foil. (Set the banana in the foil before the chocolate, to minimize the mess). Set on the edge of the fire or on hot coals for 10 minutes or so. Bust open and eat.

Hi Gregory,
One thing you can do is take pineapple, peaches, plums or pears. Slice them in half, dip them in sugar and grill over the coals. You can put them on skewers and grill them that way too. The sugar will carmalize and make them tosty brown. As many others said, Smores are good. You can also take store bought pound cake, slather butter on each side and grill away too. If you have a dutch oven, any type pie or cobbler can be made too. Good luck and happy cooking..

Brown Bears in an Apple Orchard

Ingredients:

2 boxes gingerbread mix, mixed according to package instructions
Two 15 oz. cans applesauce

Preparation:

Spread applesauce on bottom of Dutch oven. Spread prepared gingerbread mixture on top of applesauce and cover with an oven lid. Place the pot in hot coals and shovel coals on top of oven. Do not place more than 10 coals on the oven lid. Bake approximately 30 minutes. No pan is needed for this hobo-style dinner. Just remember to bring along some tongs and potholders.

Campfire Yum-Yums

Ingredients:

1 angel food cake
1 can crushed pineapple
Brown sugar

Preparation:

Cut angel food cake into slices about 1/2-inch thick. Place in foil. Spoon pineapple, juice and all, over cake. Sprinkle with brown sugar. Cake can be made in large or individual packets. Close foil packets and cook in coals until warm.

Campfire Banana Split

Ingredients:

Ripe bananas, one per person
Milk chocolate bar or chips
Marshmallows
Fruit or jam, optional

Preparation:

Hold the banana so it curves up like a boat and cut the top segment of the skin along the natural ridge; leave it attached at the stem and make a flap. Scoop out a trough, leaving an even amount of banana in the skin on the bottom, sides, and at both ends.

Fill the trough with small pieces of chocolate and marshmallows; add fruit or jam if desired. Place the flap back on top of the filling and put banana in hot coals until skin is dark brown. Use tongs to remove the banana and eat with a spoon.

One of my favorets is hobo pie. You need an sandwich maker for campfires. Take 2 pices of bread and a filler like pie filler and put it in the midle and put the other slice of bread on top. place it in the fire for a few minutes and wala you have a hobo sandwich.

S'mores are the old time favorite. Graham crackers, with a hersheys chocholate bar, and roasted marshmellows sandwiched between. Ummmm. Ummmmm, Ummmm!!!
