a simple cocktail that originated in Italy. It is an equal mixture of Champagne and peach juice, often served at celebrations.
the original Bellini Cocktail is said to have been invented in Harry's Bar in Venice. It consists of pureed white peaches and Prosecco. Generally however, champagne is now commonly used in place of Prosecco. Other fruits and/or flavoured liqueurs are sometimes substituted for the peach puree.

An Italian mixed drink. I saw raspberry ones made with chilled brut champagne and thawed frozen raspberries processed in a food processor with 2 tablespoons of sugar. Scoop a large spoon of the resberry mixture in the glass and pour the champagne over it- serve

Mmmmm. Champagne and peach juice. Terrific for brunch with some good belgian waffles or aebleskivers.

champagne and peach puree, traditionally. But it canbe made with any fruit. not to be confused with bollini a brand name for a pinot grigio

belinis are any kind of passion fruit puree(strawberry, raspberry, mango, etc) mixed in a flute with proseco...you can substitute champagne.
