My cat is recovering from Hemobartonella / IMHA and all his bloodwork looks great except for that his Lymphocytes continue to be elevated (8700). Does anyone know why this might be?

lymphocytes=white blood cells.
it's probably because of infection. white blood cells rise when there is an infection.
or possibly a type of Lymphoma cancer, but if he's recovering from an infection i doubt it.

May be a sign of 'Feline" Lymphoma, or waht is commanly know as "Feline Aids" you can confrim this by your Vet. or a web site.
