Well, you are eating meat, which is muscle. And if your steak has any fat on it, then you are eating fat from the cow, too.
If you're asking which cow muscles you are eating, here's the breakdown:
The back leg flanks of the cow (thighs and butt, in human terms) are the cuts used to make Round Steak, Rump Roast, etc.
The hip area of the cow makes the sirloin.
The cut of meat on the back, just towards the tail end of the ribcage are used to make the T-Bone, tenderloin, and porterhouse steaks.
The area on the cow's back at the ribcage is used to make Ribeye, and of course, ribs!
The shoulders/collarbone area is used to make chuck. (Heard of ground chuck for hamburgers?)
And the meat around the breastbone is used for brisket and corned beef.

Meat from cattle is from the different muscles. The most tender meats when cooked are "marbled" with very thin lines of fat when raw. That small amount of fat melts into the meat and so the meat is juicier and more tender. The whitish or pale yellow soft parts are fat pockets - good steak won't have much of this. The white stringy and tough parts are tendons and ligaments - good steaks have VERY little or none.

You are eating the muscle. However, some folks do eat the liver, tail, heart, kidneys, and even feet of certain animals. Oh yes, I forgot the brains too. But in your average hamburger, it's all muscle.
