My best friend of 27 years died of Celiac Disease in 2001. My advice to you is to follow your doctor's advice. Learn all you can about this disorder, which is thought to be somewhat hereditary. My friend was in so much denial about what was causing all of her very painful symptoms, and for 15 years, she lied to her doctors and to her family about all of her health problems. She ate whatever she wanted with impunity and suffered the consequences. I won't go into detail here. Being of Italian descent, she loved pasta and breads and loved to cook and bake. Sorry to say, her denial finally killed her. By the time she was ready to change her diet and examine her lifestyle, she was already having seizures regularly and was constantly injuring herself. She was forced to retire early from state government employment and finally lost a community service position because she could no longer deny that she was having seizures at work. She died of a blood clot to her lung caused by a broken bone in her foot, caused by having repeated seizures in her kitchen. The seizures, according to the medical literature I read, were being caused by calcification of the brain's neuronal structures. There was no cure, but she never considered prevention until it was too late. I shall pray for you, that you will be well.

My husband does. We have substituted rice flour for wheat, quit eating wheat, barley, rye and oats, and are trying gluten free recipies.
There are stores online that have make it yourself gluten-free bread mixes. Cheba brand is pretty good.
I am diabetic, and the lack of wheat is good for me as long as I don't substititute higher glycemic foods.
There is lots of info on the web.
