Great Question!! There are two Organic Foods, organically grown and certified organically grown. Ogranically grown means that no synthesized fertilizers were used. Certified organically grown is more complex. It entails not having and synthesized fertilizers, synthesized pesticides, as well as, no treated posts or wood within so many feet (usually 50)... they even go as far as looking at the compost you use. I went through the process a few years ago when I grew produce.

What is "certified" organic?
The United States Department of Agriculture (USDA) has established a uniform set of production methods for growing and processing organic food. If farmers and manufacturers meet these standards, which include annual on-site inspections by third-party inspectors, their crops or food are certified to be organic. If a food product has between 95% to 100% organic content, it may be called "organic" and the USDA Organic seal may be used on the packaging

This is a link to just about all the info you would want to know about organic products. This is from the web site of the company I work for.
