Classic Martini (up)

Fill a martini shaker half-full with ice
Pour 1/4 oz of vermouth onto ice
Swirl vermouth for 1/2 second and strain it out from the ice
Now pour 1 3/4 oz of gin or vodka onto the ice
Shake...one, two, three seconds (no longer!)
Strain into a martini glass
Garnish with an olive (some prefer a lemon twist)
_______________________________________

Some things of note...
--Because a martini is essentially straight gin or vodka, only the best will do. For gin, use either Tanqueray or Bombay Sapphire. For vodka, use Stoli or similar quality.
--The idea behind the vermouth is to get just the tiniest bit clinging onto the ice, so when you strain it, dump ALL of it out--the amount of vermouth clinging to the ice will be the perfect amount.
--Do NOT shake it too long...but be sure to shake it long enough. Three seconds is perfect! The idea is to take the bite off the gin or vodka, but retain that "crisp & cool like steel" quality.
