At the present moment, I don't know of any UFC or Pride Fighters that use Kung Fu in the competition today. However, in the earlier UFCs, there were quite a few Kung Fu Fighters. I can't remember the names of most of them but one person that comes to mind is Robert Van Clief. He practiced Chinese Goju which is a type of kung fu. He fought Royce Gracie in UFC 4 and lost after about 3 minutes into the first round. I can't blame him though. Rob Van Clief was 51 years old at that time and he was fighting a young brazillian jujitsu master. Checkout the link below. You can see a list of people who fought in the UFC and the styles that they represented. All in all, the Kung Fu guys didn't do very well because they were not trained on the ground as well as the brazillian jujitsu guys. So I imagine that because of this factor, most fighters let go of kungfu and chose the other arts like thai kickboxing, Brazillian Jujitsu, Sambo, Judo, Wrestling, and Boxing. I don't think it means that Kung Fu is useless. It just doesn't seem to be effective in the confines of the UFC or Pride.

During some of the initial UFC's, back in 1993-1994 I believe, there was a gentleman by the name of Jason Yee that was a kung-fu artist that entered UFC.
Alot of Kung-Fu that is taught today does not encompass the full-realm of tools needed to compete appropriately within UFC or Pride events so most fighters draw on those training aspects which will get them the win given the rules of the match.
UFC seemed to initially have some strikers and groundfighters competing heavily, then it seemed to gravitate a bit more towards groundfighting as that was what was winning. Now, it seems to have taken a turn back towards the striking arts a bit as fighters have learned to evolve and round themselves out by becoming proficient standing and groundfighting.

Some of them might have some traditional training, but noone uses just old school kung fu in a match. Almost all the fighters use a combination of wrestling, BJJ, and kickboxing, so I doubt you'll see any scream dragon tiger claw strikes anytime soon in the octagon.
