I am in need of some easy crockpot recipes...I have chicken and velveeta cheese on hand but any crock pot recipes will help this mom on the go...THANKS

nacho chicken

1 cup cooked chicken -- chopped
3/4 pound velveeta cheese -- cubed
2 tablespoons minced jalapeno
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1/4 cup milk
tortilla chips
2 cups shredded lettuce
1 cup chopped tomato
Directions:

Spread tortilla chips on a large platter. Set aside. In a medium saucepan, combine chicken, cheese, onion, pepper and milk. Cook and stir over low heat until cheese is completely melted. Pour or spoon cheese mixture over tortilla chips.

Top with shredded lettuce and tomato.

This recipe for Chicken Nachos serves/makes 6.

i Love soup beans and cornbread. heres how i make mine, very good recipe too
Pinto Beans + Ham
ingredients:
1 lb pinto beans, rinsed
3 cups water water
1 large onion, chopped
3 cloves garlic, minced
1 tb chilli powder
1 tsp salt
1 tsp pepper
1/2 tsp ground cummin
1/4 tsp oregano, dried

directions:
Place beans in 5-6 qt slow cooker with water and remaining ingredients cover cooker, and cook on low setting for 9-11 hours or until beans are soft and done.
Stir couple of times during cooking and add more water if necessary.(i fill the pot up like an inch or 2 below the top)

Very tasty if you like soup beans, and eat it with jiffy cornbread and raw vidalia onions after you serve in a bowl

Make chili in it. I did it one time and it was the best I ever made. However you make your classic chili recipe, just put all the ingredients together in the pot and let it go, I let mine go for over 5 hours once..the longer the better. Savor the flavor!
