Most basic -- peel and cut up the potatoes, cook in chicken broth (if you have it) or water or milk with some salt. Don't use too much of the liquid, let the potatoes cook until soft and the starch starts to thicken the liquid. Before they are mush, take it off the heat and mash or blend it together. Taste and add extra milk or salt if needed. You'll have to adjust the liquid -- you can always take some out before mashing and only add it back if needed.

That's the most basic -- if you have the ingredients, here are some varations: 1) add a bay leaf or two to the cooking liquid, 2) saute some onions or garlic and add it before you simmer the potatoes, 3) add some fresh or dried herbs (thyme or dill would be good), 4) add a little butter before blending, 5) crisp some bacon and add that, 6) add some grated cheddar cheese...

Potatoes are wonderfully versatile. You can even combine some of these variations together.

Cut potatoes (1 med potato per person) in cubes and boil in salted water. In another pan saute chopped onions in butter (about a tablespoon per potato). When potatoes are soft, drain water and coarsely mash them. Gradually add milk until it reaches a consistency that you like. Add onions and butter. Cook until the soup thickens a little. You can spice this up by topping the soup with grated cheddar cheese, sauteed mushrooms, and bacon crumbles.

this is a cheap and easy recipe to make and you can freeze it!! potatoes tomatoe and basil pasta sauce a deep frypan a big cooking pot 1 packet of soup mix ( beans, barley, lentils, dried) carrots 1. put the dried soup mix in a microwave safe container with a lid filled with water until the soup mix is covered) in the fridge. leave over night 2. drain and rinse the soup mix then put into a bowel. 3. fill a saucepan with water and put it on the stove top until boiling, add skinned and diced potatoes and carrots until semi soft. 4. put the deep fry pan on another stove top plate, and add the tomatoe and basil pasta sauce with some water so its not too thick, add the soup mix, and drained potatoes and carrots. 5. let it simmer for 15 minutes and serve in a bowel !! great on a cold winter night, great with some bread too!! plus you can freeze any leftovers in a container!! or serve the next day!!

Go to kraftfoods.com. They have a recipe for potato soup that I made and loved. It was so simple too. I didn't even have to peel the potatoes. I think it was as simple as just adding milk with chicken broth. Check it out. You will find many good recipes.

boil peeled potatoes in water, till the water goes down and potatoes are tender. Add milk. Let come to simmer. Add spices, (Salt, Pepper, or whatever you like.)

You can also add a bit of fried celery and onions that have been fried in butter, and add chopped boiled eggs to the end of cooking.

Sometimes I like to add, a bit of raw onion, cheddar cheese, and crumbled bacon.
