Drain & rinse a can of black beans. Smash them up with a fork leaving it kind'a lumpy. Add some salsa and a can of drained, cooked white meat chicken. Stir in some shredded cheese. Spoon onto a flour or whole wheat tortilla and roll up burrito style. You can warm these in the microwave or in the oven. A good side is: 1 pouch of Success rice, white or brown, prepared by package directions. When done empty it into a bowl and add salsa and warm up for easy Spanish Rice.

Try a chicken breast with 1/2 a sliced onion and a cut up potatoe all seasoned in a foil pouch. Cook in oven at 350 degress for about 35 minutes. Place on a cookie sheet so doesn't spill out. Easy and quick for one and can mulitply easily for a group.

Spaghetti with a green salad topped with Italian dressing. Serve breadsticks AND if you make enough spaghetti, you'll have some leftover for tomorrow night and you won't have to cook! Just boil some spaghetti noodles in one pan and in the other, brown some ground beef and add a jar of spaghetti sauce. Wahla...dinner!

Pasta with olive oil. Shake on some garlic powder, Parmesan cheese and dried parsley. If you feeling sassy, try some cut up tomatoes in it too. When I wa single, I lived on this. I still make it for my husband.
