Bruchetta
4 servings

3/4 cup tomato, seeded and chopped
1 clove garlic, minced
2 tablespoons fresh basil, snipped
1 teaspoon balsamic vinegar
1 teaspoon extra virgin olive oil
1/8 teaspoon crushed red pepper
8 slices sourdough bread, baguette sliced on bias
1 tablespoon parmesan, grated
Combine tomatoes, garlic, basil, vinegar, oil and red pepper. Set aside. Broil bread slices on both sides until lightly toasted. Top each bread slice with about 2 tablespoons tomato mixture. Sprinkle with parmesan cheese. If you wish to serve warm, broil 30 to 60 seconds.

Thai-style Pineapple Snack

1/2 a ripe pineapple, peeled and cored
Kosher salt
Cayenne pepper
2 tablespoons chopped fresh mint leaves
2 tablespoons chopped fresh cilantro leaves
Lime wedges

Cut the pineapple into bite size wedges or slices.
Put the salt, cayenne pepper, mint, cilantro, and limes into small bowls. Squeeze a bit of lime juice onto the fruit. Then lightly dip the pineapple into a little salt and as much cayenne as you like and finish with the mint and cilantro.

slice a cucumber into really thin slices, where each slice is done along the long slice of the cucumber. Add plenty of lime juice and chili pepper powder (make the cucumbers swim in the chili/lime sauce). It is both delicious and completely fat free :-)

low fat ritz with low fat cream cheese

fruit tray with lot fat strawberry & peach yougurts for dips

veggie try with low fat ranch for dipping

baked tostidos with lawfat sour creme mixxed with no fat salsa (1 heaping tablespoon of salsa med to 1 container of lowfat sour creme stir) then also put some sour creme out also for dipping too!!

Dry fry florets of cauliflower (or broccol) with cumin seeds, garlic and chilli flakes. Serve with natural yoghurt and mint. A taste of India and absolutely delicious and nutricious!!

carrot batons ,celery sticks, cauliflower florets, cucumber to dip in a tomato salsa dip or with a low fat sour cream and chive dip .

i have a great recipe for something i call cucumber yum yum's, ingedients, english cucumber sliced, a good french bagette, low fat cream cheese, dill and good seasons italian dressing packet. mix packet with cream cheese spread on bread, add cucumbers sprinkle of dill. cucumber yum yum's
