I'm going to my husbands family picnic next Sunday and I would like to bring a homemade dessert. I'm not sure of what to make though. I'm a pretty good baker so I'm up for any ideas. Also, if anyone has one, a recipe for strawberry rhubarb crumble or a peach cobbler along with any suggestions on what to make for the picnic. Greatly appreciated...thanks!

Strawberry Rhubarb Crumble
Ingredients:
4 c rhubarb, sliced
3 c strawberries, halved
1/2 c sugar
1/3 c sugar
1 1/2 t cornstarch
1 t lemon juice
6 t butter, room temperatture
3 1/2 oz almond paste
1 c all-purpose flourProcedure:
Preheat oven to 400 f. Mix rhubarb, strawberries, 1/2 cup sugar, cornstarch and lemon juice in a large bowl. Toss well to coat. Divide mixture equaly among six 1 1/4 cup custard cups. Mix butter, almond paste, and remaining 1/3 cup sugar in processor until well blended. transfer butter mixture to medium bowl. Add flour. Using Fingertips, work flour into butter mixture until moist clumps form. Sprinkle Topping over rhubarb and strawberries, dividing equaly. Place custard cups On baking sheet. Bake until filling bubbles and topping is golden, About 30 minutes

Peach Cobbler Recipe

INGREDIENTS:
3 cups peeled and sliced fresh peaches
1/2 cup granulated sugar
1/4 cup (4 tablespoons) butter cut in small pieces

Crust:
1 cup all-purpose flour
2 teaspoons baking powder
1 tablespoon granulated sugar
1 teaspoon salt
1/4 cup (4 tablespoons) butter
1/2 cup (or less) heavy cream
PREPARATION:
Lay sliced fresh peaches in a buttered 1 1/2-quart baking dish. Sprinkle with 1/2 cup of sugar. Dot with the 1/4 cup butter which has been cut into small pieces. For crust, mix together, flour, baking powder, 1 tablespoon sugar, and salt.

Cut in the remaining 1/4 cup butter. Stir in heavy cream until dough is manageable. Roll dough out on a lightly floured surface; place over sliced peaches. Bake at 375° for 35 minutes, or until top is nicely browned.
Peach cobbler serves 6.

Summer doesn't get any better than this--lounging on the grass, stuffing your face with food. But before you head out into the heat, keep these tips in mind:

Freeze drinks the night before. Not only will your drinks stay cold the next day, they'll help keep your food chilled.

To keep your picnic festive, bring a colorful and comfortable blanket. Extra towels can serve as pillows when sunbathing or napping.

Try to keep bees away with a sprig of fresh mint placed on your blanket.

Set up your picnic in the shade.

Food spoils quickly in hot weather. Be sure to tote your munchies in an ice-filled cooler, and if you're driving, transport your cooler in the air-conditioned car instead of the stuffy trunk.

Throw away any food that's been out of the cooler for more than an hour.

Modern-day picnickers could learn from the Victorians, who wouldn't dream of eating outdoors without a kerosene burner to boil their kettles for tea. Armed with baskets crammed full of dishes and utensils, they thought picnics should be just as civilized as eating in a dining room. And the food was just as sumptuous: iced champagne rolled in wet newspapers to preserve the chill, lobster tails with homemade mayonnaise, cold poached chicken with cream sauce, trifle (chunks of pound cake, fresh fruit, rich custard and cream) and whiskey punch to wash it all down.

Most of us don't eat like that today, even indoors. But for a special treat, take a cue from the Victorians and create a gourmet feast for the outdoors. Several elegant dishes, accompanied by a special beverage, can be just as easy as the sandwiches-and-chips variety of picnic. All you need are a savory main dish, a zesty side and a rich dessert.

Try an Italian-inspired picnic with Pan Bagna (a whole-meal sandwich stuffed with cured meats, cheese, and vegetables, and drenched in vinaigrette). Accompany it with baby artichokes and finish off with Tiramisu (try our yummy version using pound cake instead of ladyfingers). Or take along a beautiful Salad Nicoise with a crisp baguette and an Apricot Frangipane Tart. How about Greek-style wraps with tzaziki, served with stewed green beans and a tray of baklava? And don't forget something good to drink, whether it's a cold bottle of summery white wine, a flavored iced tea or a special fruit punch.

Rhubarb crumble is like a crisp, made with chopped rhubarb, orange juice, cinnamon, butter, and oat butter topping.
INGREDIENTS:
3 cups chopped rhubarb
2 tablespoons orange juice
3/4 cup granulated sugar
1/4 teaspoon cinnamon
1 tablespoons butter, cut in small pieces

Crumble Mixture:
1/4 cup melted butter
1/3 cup brown sugar
2/3 cup sifted all-purpose flour
1/8 teaspoon salt
1/4 teaspoon baking soda
2/3 cup quick cooking oats
PREPARATION:
Arrange diced rhubarb in a buttered 8-inch square baking dish. Sprinkle with orange juice, 3/4 cup sugar, cinnamon, then dot with the 1 tablespoon of cut up butter.
Combine melted butter with brown sugar. Sift together the flour, salt, and baking soda; mix with oats. Combine the flour oat mixture with the brown sugar and melted butter mixture. Spread over rhubarb. Bake at 375&de;g for 40 minutes. Serve warm, with ice cream or whipped topping.

3/4 cup milk
1/2 cup margarine, melted
1 (29 ounce) can sliced canned peaches, drained
1 teaspoon ground cinnamon

DIRECTIONS:
Preheat oven to 400 degrees F (200 degrees C).
In a large bowl, combine flour, sugars, baking powder, salt and vanilla. Pour milk into dry ingredients and then stir in melted margarine. Mix thoroughly.
Pour mixture into a 9x13 inch baking pan. Arrange peaches on top and sprinkle with cinnamon. Bake in preheated oven for 30 minutes.

allrecipes.com is good, but I find I like www.cooks.com best, the recipes are easier to find

you should definitely try to make Baklava( a Greek desert) It is devine. you will love it I do!!!!!!!!!!!!!!!!!!
