Absolutely! In fact, you can substitute several different things for vegetable oil when in a pinch: corn oil OR safflower oil OR melted shortening OR cooking spray (for greasing pans).

Both are good for you, each fruit/vegetable has different vitamins. Therefore as more variety, as better. Vegetables have generally less sugar than fruits.
