Add a box of instant pudding to the mix and they'll stay soft and chewy (even if you leave them uncovered on the counter all night. Did that once by mistake, but they were still awesome!)

A small amount of cream of tartar added to the cookie dough will allow the cookies to remain in the oven for the full time, brown, and still come out chewy.

For a general cookie recipe making approximately 6 dozen cookies by dropping heaping teaspoons onto the baking sheet, approximately 2 teaspoons of the cream of tartar should be just right!

take them out before they are actually ready, they will be chewy in the middle

don't bake them for very long. use olive oil instead of corn or veg oil. olive oil makes baked goods richer.
