People who have had near death experiences claim that they do not even realize they are dead if the "crossing over" took place while they were awake (shooting victims or people who are in car crashes for example). They claim it takes awhile for the fact that they are no longer physical beings to sink in. Who knows, but it seems to me that if you died in your sleep you would have the sensation of "waking up" to the experiences that waking die-ers experience - floating, light, warmth, speeding motion, etc.

Well, I have died in my dreams a few times, and every single one of them I knew I was dead, I don't remember how I died (in the dream), but I was dead, and I was worried, you know all the things left undone, who will show up at your funeral...

A person always wakes up for a few seconds before clocking out.

I think your mind would know that you were dead, and you may experience an out-of-body sensation.

Oh yes, we will all know when we die. Our body will die, but not our souls. Please read about Lazarus in the Bible, the rich man poor man parable. The poor man goes to Abraham's bosom and the rich man goes to Hades. The Bible will answer all your questions...

I imagine so. You'd either end up in hell or heaven, and when you arrived, you should assume you're dead.

Not necessarily. And not if you don't believe in life after death... it would be like not knowing you're dreaming.
