I think you should just say what needs to be said.
When the two of you are alone, explain to the person that their chewing is very loud, and distracting in a quiet office. The person may not realize this character flaw. Politely bring it to their attention in the "just thought you might want to know" manner.
Then thank them for listening to you.
If they don't quit, guess you'd better figure out something humorous about the situation. You and the rest of your co-workers could all mock the person simultaneously. Free chewing gum to the winner!
It could be worse.
Bad odor is the worst, so, at least they don't stench up the office!

Actually there is no way of telling them without them getting offended and that's the least thing we want to do and the least way we want to make them feel. No matter if it's in a nice way or really offensive they would still be angered at the fact that you dared to tell them something like that. You can always begin by, well "(Co-Worker) I really don't want to offend you, but is it possible that when you eat. You eat with your mouth closed. Not that you look wrong or that the sound is really bad. But I just feel that you should have a bit of manners or just try to get away a little because I see other co-workers stare. I'm only looking out for you." That still won't change nothing. They still will feel wrong. And at the end they will still be angered with you. That's just my opinion.

I can't think of any polite why to tell them. But I'm a very blunt person. Next time it happens, ask then to stop smacking b/c it is distracting you.

Butter, on non-sweetened corn bread, eaten with black eyed peas, a huge eco-friendly onion and doubtless (yet no longer inevitably) both a grilled wiener, a slab of fried unsolicited mail, or a floor crimson meat patty. the beef is non-compulsory, as I have eaten only the cornbread and peas for dinner lots of cases.

It kind of depends on his/her ethnicity. Assuming he/she is from Asia, just tell them something like, "You know ____, here in America, we chew with our mouths closed so that we don't disturb other people." There is no really a polite way to say it.

I think that you can sit with him one day and eat nicely one day.Or you can ask your another co-worker Am I disturbing you with my smacking while he is hearing.Or you can just discuss manners when sitting together.

To be polite, just ask them if they know that they are doing it, some people are unaware of something, thats why they continue.

tell them they eat with their mouth open!!! or say how you hate when people eat with their mouth open... the next time they do it they will problie catch theirself and stop.
