So far, i've mostly just baked it with some lemon juice and pepper. Does anyone have any ideas on how to cook it, or any other seasoning?

I made this with Tilapia last night

Ingredients
1 12 oz can Beer (I use Guiness stout)
1 1/2 cups Flour
1/2 tsp Salt
1 tsp Paprika
1 cup Flour

Directions
Pour the beer into a large bowl. Sift the flour, salt, and paprika into the beer, whisking until the batter is light and frothy. (The batter may be used immediately or stored in the refrigerator for up to 1 week, but be sure to whisk it occasionally). Heat at least 2 inches of oil in a frying kettle or electric fryer. Just before it reaches 375F, quickly dredge the fish and shrimp with flour, shaking of excess then dip in the beer batter, coating well, and drop them into the hot fat (do this in 2 batches). When they are brown on one side - less than 1 minute - turn and brown them on the other side. Drain on paper towels. Serve hot with lemon wedges. Most of the time you wont even need dipping sauce.

you need eggs,crackers and seasonings and olive oil&veg.oil first make sure your cat fish is dry then beat your eggs with just a small dab of cream dipp your cat fish in the egg mix roll out your crackers i like keebler club my self when you have them to a fine crumb mix add salt garlic powder and just a small amount of pepper after the egg bath roll your fish in the cracker crumbs now you can mix a small amount of olive oil and veg oil and put just a small amount on a cookie sheet then lay your fish on the cookie sheet bake at 350 for 5 to 8 minutes on one side turn over and do like wise to the other side if your fish is real thin sliced you wont need that much time you can check it by your fingers if the fish is solid to the touch it is done you can also deep fry it it dont take as long to deep fry it but i like it better baked not as greesy serve it with wedges of lemon or lime

the Southern Fried Catfish,, use cornmeal, salt, pepper, red pepper, and what ever else you want...

mix up in a bowl,, roll your fish around in it and drop it into a fry pan of what ever,,, peanut oil is the best..... no greasy taste....and better for you... for about 4 minutes or so.... make up some hushpuppies,, coleslaw, french fries,and onion rings, and you got your self a Southern meal..........

When using cat fish I have always used cornmeal and Cajun seasoning to give it a blackened look. Serve it with lemon and a remoulade sauce.

corn meal batter with a bit of mustard - the vinegar in it takes away the fishy taste. Fried - med low heat

Pan fry. Butter, pepper, salt. Cayanne pepper if you like it seasoned.

fry them usy milk and egg for batter and bread them with cornmeal and some season salt
