Heritage Mushroom Marinara

Serves: 4
Wine Pairing: Keswick Vineyards Heritage

2 tablespoons olive oil
1/2 cup finely chopped onions
2 tablespoons butter
1 cup Heritage wine
2 cloves garlic, minced
1 8-ounce package shitake mushrooms
4 large Portobello mushroom caps cut into 1/2" wide slices
1 15-ounce can diced tomatoes
2 tablespoons tomato paste
1/4 cup water
1 tablespoon finely chopped fresh basil
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon brown sugar
1/4 teaspoon salt
1/4 teaspoon black pepper
8 ounces fettuccini pasta, cooked according to directions

Heat oil in large skillet over medium heat. Add the onion and cook about 3-5 minutes. Add the butter, wine, and garlic and stir until the butter is melted. Add the mushrooms and cook 8-10 minutes, turning mushrooms until they are tender but not mushy. Stir in the remaining ingredients, except for the fresh basil. Bring to a simmer and then reduce heat to low and cover and cook for 10 minutes, stirring occasionally. Uncover, add the fresh basil, and continue to cook uncovered for 5-10 minutes until sauce is reduced to about 2 1/2 cups. Serve over fettuccine.

Grilled chicken and veggies on top of rice pilaf. Veggies like broccoli, carrots, zuccini, squash and pea pods. Then top it with a mixture of soy sauce and teriyaki. It is wicked good!!

maybe have a Roast and a baked potoato, and some greens! whatever you want!!
Just make sure that you don't eat some stupid thing!!!
