Hope you have a BBQ. The best way to cook it is to rub it all over with a generous amount of Santa Maria BBQ seasoning or McClintock's and cook it over indirect heat on the BBQ with hickory or oak chips for smoke flavor, until the desired temperature. Let it sit on a cutting board lightly tented with foil for at least 15 minutes before carving. The drippings are delicious on a slice of crusty bread also
