Just to clarify, I eat very healthy. I'm just wondering why others have such a hard time with it.

Make healthy food more available AND make unhealthy food less available. Given the choice the American Preference will be for the unhealthy foods. To the Americal taste it is Sugars, Salt, and Fat that makes food taste good - eliminate these, and you have eliminated the desirability of the food.

We need to be re-educated.

to eat healthy you also have to be mentally healthy and not see such a thing as a diet. Do you know that simply breathing correctly (taking 3 seconds for inhaling and 3 for exhaling)at least twice every hour and eating as slow as you can...can help you lose 3kg? It isn't all about your apetite...it's all about your brain and your body. Believe me.... concentrate on how you feel and you will become more healthy...

Well first off, If you deepest commitment is to eat healthy, you would do it. Hence, if one is not eating healthy, there probably is a desire in their hearts to be healthy however there are other desires that supercede the "health" one and hence they do not eat healthy. There are many "ways" to make one eat healthy however here is one practical way:
Hold yourself accountable and put yourself at risk. Find a friend who will hold you accountable and put yourself at risk with that person. What this looks like is this: If you decide to eat only one desert a month, first let your friend know that so he/she can hold you accountable. To put yourself at risk, you could, for example, tell your friend that if you ate more that one desert a month, you'd pay your friend $1000. This way, you will drive yourself to eat healthy and not risk losing a $1000 dollars. This is putting yourself at big risk however it's worth it rather than eating unhealhy and dying sooner.

I do eat healthy most of the time.
I went to the library and got a bunch of healthy cook books and saw a variety of easy recipes.
Simple is the only way I would be able to do it.
I "cheat" sometimes, when I am out with friends and need a treat but in moderation just about anything is OK.

What got me eating healthy more often was a warning from my doctor. :) So maybe a checkup would help.
