Rachel Ray's meatloaf muffins are delicious!! It's possible some of these ingredients could be considered fancy so i'm not sure if this will help.. but make it sometime [= Oh and the recipe may seem long and hard by looking at it, but once you read through it a few times it's quite simple. I've made them plenty of times.. it's easy! :D (from the show 30-minute meals) 1 2/3 to 1 3/4 pounds ground sirloin 1 medium onion, cut into chunks 2 ribs celery from the heart of the stalk, cut into 2-inch pieces 1 green bell pepper 1 large egg plus a splash of milk, beaten 1 cup plain bread crumbs 2 tablespoons grill seasoning (recommended: Montreal Steak Seasoning by McCormick) 1 cup smoky barbecue sauce 1/2 cup tomato salsa 1 tablespoon Worcestershire sauce Vegetable oil or extra-virgin olive oil Micro-way-cool Bacon and Green Beans, recipe follows Smashed potatoes and cream cheese, recipe follows Preheat oven to 450 degrees F. Put ground beef into a big bowl. Put onion and celery into a food processor. Cut the bell pepper in half, rip out the seeds and throw them into your garbage bowl. Cut the pepper into a few pieces and add to the food processor. Pulse the processor blades to finely chop the vegetables into very small pieces then add them to the meat bowl. Add egg, beaten with milk, bread crumbs and grill seasoning to the bowl. Next, mix together the smoky barbecue sauce, the salsa and the Worcestershire sauce. Pour half the sauce mixture into the bowl with the meatloaf mix. Mix the meatloaf together with your hands. Wash up. Brush a 12-muffin tin (1/2-cup each) with vegetable oil or extra-virgin olive oil. Use an ice cream scoop to help you fill meat into a each tin. Top each meat loaf with a spoonful of extra sauce. Bake about 20 minutes. Cut open 1 muffin to test that the middle is cooked through. Shrimp are totally easy. Buy fresh or frozen (Peeled and de-veined and if you can get them without tails do it).

Heat 2 - 3 tbsp. olive oil and 1 tsp butter in a skillet at medium heat.

Add chopped garlic (I buy it in a jar to avoid chopping!)

Add shrimp and 1 tsp lemon juice and sautee for 5-6 minutes (longer if the shrimp are still frozen; an okay method but watch the heat).

Salt and pepper to taste in the pan.

Serve this with any pasta or rice.

Start to finish this will take 20 minutes including cooking the pasta.

This is the quickest meal ever - and it's really good.

Crap In A Pot

6 oz dry spaghetti broken into pieces.
1 can condensed cream of mushroom soup
1 can of tuna
1/4 # Velveeta chopped in chunks
White wine
Paprika
Black Pepper

Boil spaghetti 5-7 minutes. Drain and return to pot. Add soup, cheese and tuna. (do not drain tuna.) Fill soup can with wine- swish around & then add to pot. Repeat with tuna can.
Stir until cheese is melted. Add pepper to taste. Spoon into bowls.

Sprinkle paprika on top & serve with chunks of French bread.

you can always make homemade taco salad.. very easy and quick and always a family favorite. Brown your meat and then add ortega brand dry packet of seasoning. Take a large bowl and put lettuce in the bottom then meat and then cheese and then crumple one full bag of tortilla chips on top and mix, you can put the tomatoes on the side in case no one likes them, Serve with sour cream and the thin ortega sauce. Takes about a half hour to make sometimes quicker

this is hit at home when ever i make it.

1pkg- Italian sausage
1jar- favorite pasta sauce
8oz slice mushrooms(fresh is best here)
and your favorite pasta i like to use penne.

slice the sausage about a 1/4" thick and saute with a splash of olive oil. When the sausage is almost cooked add your mushrooms and cook until tender and your sauce and simmer for 10 minutes and serve over your favorite pasta.

If you want you can add sun-dried tomatoes, fresh garlic, roasted red peppers, shrimp, chicken, the choice are only limited by your imagination.

Take boneless skinless chicken breasts, and season with seasoned salt, pepper, and garlic powder. Brown in a little oil on each side. Pour a jar of green salsa on them. Cook about 15-20 minutes, then cover with cheese. It is delicious. I serve this with rice. Spanish, or your own rice invention.

I have one this is from Rachel Ray's 30 minute meals and my mom and me make this often using ground turkey instead of chicken and if you can't find smoked papirika the regular ruby works just fine I garantee that once you make this it will be a repeater!!

Chicken and Mushroom Goulash with Gnocchi
Prep Time: 15 minutes
Cook Time: 25 minutes
Yield: 4 servings

2 tablespoons extra-virgin olive oil, 2 turns of the pan
1 tablespoon butter
1 1/2 pounds ground chicken
1/2 pound white mushrooms, sliced
2 cloves garlic, chopped
1 medium onion, chopped
1 red bell pepper, seeded and chopped
2 teaspoons smoked paprika, 2/3 palm full
Salt and pepper
1 cup chicken stock
1 cup tomato sauce
1/2 cup sour cream or reduced fat sour cream
Handful chopped flat-leaf parsley
1 package fresh gnocchi, in refrigerated section of market, 12 to14 ounces
2 tablespoons chives

Heat the extra-virgin olive oil and butter in a large, deep skillet over medium to medium-high heat. Add the ground chicken. Brown the meat 3 to 4 minutes, push it off to the sides of the pan then add mushrooms, garlic, onions and peppers to the center of the pan. Cook the vegetables 5 minutes then mix them together with chicken and season with smoked paprika, salt and pepper. Stir in stock and tomato sauce and bring to a bubble. Reduce heat to a simmer and cook 5 minutes then stir in sour cream and turn off heat. Add parsley. Adjust seasonings, to your taste.
While chicken goulash cooks, bring a medium pot of water to a boil. Salt boiling water and cook gnocchi until they puff up like pillows and float, 5 minutes or to package suggestions. Drain gnocchi and add to chicken just after you stir in the sour cream.

Ladle goulash with gnocchi into shallow bowls and garnish with chives.

You can try cooking boneless skinless chicken breasts with a can of campbells cream of chicken or cream of mushroom soup. The recipes on how to make it is on the side of the can. Its a great quick meal

brown ground meat (do not add salt or any seasonings!) stir in a can of Campbells french onion soup and serve on buns with mustard. its a great quick idea my mom found years ago.PS--use about a pound of meat.
