Make a Red, White, And Blue Potato Salad or Red, White and Blue Slaw Salad. I've made both of these often for the 4th of July and they always go over well:
Red, White, And Blue Potato Salad
3 pounds cooked heirloom potatoes - purple
Peruvian, red skin and golden skinned
1 cup chopped celery
3/4 cup chopped red onion
3 tablespoons capers
3 tablespoons finely chopped basil
1/2 cup olive oil
1/4 cup rice wine vinegar
1 tablespoon sugar
1 tablespoon Dijon mustard
4 hard boiled eggs, chopped
Plenty of salt and pepper
Generous handful of cherry tomatoes
Fresh chives to garnish
Cut the potatoes into large bite size pieces
and put them in a large bowl. Toss with the
celery. In a medium bowl, combine the red
onion, capers, basil, olive oil, vinegar,
sugar and mustard. Let stand for 15 minutes.
Toss with the potatoes and celery and add
the eggs then season with salt and pepper to
taste. Mound on a platter and garnish with
the tomatoes and chopped chives.
Red, White and Blue Slaw Salad
Makes 6 to 8 servings
Ingredients
12 slices bacon
6 cups shredded cabbage
16 tablespoons cole slaw dressing (store bought or your own)
1/2 cup blue cheese, crumbled
1 cup cherry tomatoes, halved
Directions
1 Place bacon in a large, deep skillet. Cook
over medium high heat until evenly brown.
Crumble and set aside.
2 In a large bowl, combine the bacon,
cabbage and dressing. Mix well. Sprinkle
with sliced cherry tomatoes and blue cheese.
Refrigerate and serve chilled.

Not a dessert lets out a lot - you always have the flag cake topped with whipped cream and then use strawberries and blueberries to make the stripes and stars...
I'm going to suggest some sort of confetti rice dish with red bell pepper (for color) served in a blue bowl. Or it could be a pasta salad.

It doesn't have to be red, white, and blue to be patriotic. Baked Beans are as patriotic and classic american as Hot dogs, apple pie , and baseball.

start off with red jello with blue berries in it let it set.. second layer blue jello with strawberries let it set.... top it off with whipped cream and put more strawberries and blueberries on the top of the whipped cream..red white blue
