Best potato soup:

5 or 6 large potatoes washed and cubed (I prefer small cubes)
1 large onion
1 bunch of green onions chopped
2 large containers of chicken broth
1 lbs of bacon chopped
2 tbsp of butter
1 large container of Heavy Cream
salt and pepper to taste

Sauté onions in butter until tender then add in the chicken broth (or stock) and add potatoes. Put to boil and let simmer until potatoes are done. In a separate pan, cook bacon until done then add to the potato and onion in the chicken broth also add most of the green onions to simmer as well. Save some for garnish. Let all of these items simmer on low for at least an hour or so. This is one of these dishes that the longer it cooks, the better. Even if the potatoes get very soft....that is OK. Make sure to add the desired amount of salt and pepper.

After everything has cooked down - add in the heavy cream and let heat for 20 mins or so. Careful not to boil it so the cream will not break or turn.

Garnish with additional bacon, green onions and perhaps some cheese...

Weasy's Potato Soup:

INGREDIENTS:

* 7 to 8 cups of cubed peeled potatoes
* 4 cups chicken broth
* 1 cup water
* 2 large onions, chopped, about 2 cups
* 3/4 cup chopped celery
* 1/2 cup thinly sliced carrots
* 2 tablespoons dried dill weed
* 1/4 cup butter
* 1/4 teaspoon pepper
* 1 to 2 teaspoons salt, or to taste
* 1 can (12 oz) evaporated milk

PREPARATION:
In a large slow cooker, combine potatoes, broth, water, onion, celery, carrots, dill weed, and butter. Cover and cook on high for 7 hours or until the vegetables are tender. Stir in milk and season with salt and pepper to taste; continue cooking to heat through. Use a hand mixer or potato masher to blend some of the potatoes to thicken soup. To thicken further use instant potato flakes; to thin soup, add a little whole or skim milk.

This is the recipe I use and my kids love it.

Peel and dice potatoes, depending on how many you like in your soup and how many you have to feed. I ususall do about 8-10. Add a slice of ham, chopped ( I like the one in the meat market with the small bone in, I trim off the fat and take out the bone.)Just cover with water and boil until tender.

Drain off 1/2 the water and add milk and 1 can of condensed milk, salt, pepper to taste and we like to add dill. If you like a creamier soup you can add half and half instead of milk or even some heavy cream. and cook for about 15-20 minutes on low. Be sure you season so it's not bland. I like to top mine with cheese after ladleing into a bowl.

It's about the method and not the recipe, you can add bacon instead of ham, no meat if your a vegetarian, more cheese and brocolli, and even coursly mash the potatoes if you don't want chunky soup. It's all up to your taste.

Garlic and Potato Soup

Ingredients:

4 cloves garlic, minced
3 cups chicken broth
1 tbsp. unsalted butter
1 bay leaf
1 pinch dried sage
sea salt and fresh ground pepper to taste
1 lb. russet potato, peeled and diced in ½ inch cubes
1 tsp. cumin
2 eggs, separated, discard whites
1/3 cup Swiss cheese, grated

Procedure:

Put garlic, broth, butter, bay leaf and sage into a soup pot and simmer for about 15 minutes. Add a little salt and pepper and the potatoes.

Cook until the potatoes are very tender but not falling apart.

Lightly beat egg yolks in a small bowl and add a large ladle of the hot broth to the bowl.

Whisk immediately and add back to the simmering pot. Do not boil.

Blend until broth thickens slightly and remove from heat. Adjust seasoning and serve in warm bowls with a sprinkle of the Swiss Cheese over each.

Loaded Baked Potato Soup

Serves: 2-4

2 cups chicken broth
3 med. potatoes - peeled, cubed
2 green onions - trimmed, sliced
1/2 rib celery - minced
1/4 med. carrot - grated
2 tsp. distilled white vinegar
1 tsp. salt
1 1/2 cups milk mixed with 2 Tbls. all-purpose flour
1/4 cup shredded cheddar cheese
1/4 cup shredded Monterey jack cheese
2-6 strips cooked bacon - crumbled


-Bring first 7 ingredients to boil in a saucepan over medium-high heat.
-Cover and simmer over medium-low heat for 20 minutes, stirring occasionally.
-Whisk milk/flour mixture into saucepan; stir in cheese and bacon.
-Simmer, uncovered, 5-8 minutes, or until thick, stirring constantly

6-8 medium potatoes
1/4 cup butter
1/2 cup flour
6 cups milk
2 teaspoons chicken bouillon
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 lb cheddar cheese
Peel, cube, boil, drain and "mush" potatoes to the consistency you like (I like them lumpy, but my kids like smaller pieces).
In separate pan, melt butter, add flour and cook while stirring for about a minute or so.
Add half the milk and stir until lumps are out of flour mixture.
Add remaining milk and on med-high heat, heat to a boil.
Stir almost constantly or it will scorch.
After boiling, turn heat off and add remaining ingredients.

1 lg onion chopped
6 strips bacon cooked and crumbled
3 small green onions chopped
5 potatoes washed and chopped
2 TBSP butter
1 TBSP olive oil
2 cans chicken stock (8oz)
1/2 cup sour cream
2 cups milk
salt and pepper to taste
Saute white onion and potatoes in olive oil and butter until onions are clear.
add to chicken stock and cook until potatoes are tender 30-40 min low boil
mix sour cream and milk and add to potatoes, reduce heat and let simmer for 20 min stirring occaisionally

garnish with green onion and little grated cheddar...serves 4

boil your potatoes,chopped celery and chopped onions til done, drain put back in pot, add milk depending on how much juice you want is to how much milk you put in. a tablespoon of butter. salt and pepper to taste. let get hot and you got potatoe soup
