Hmmm. What gives you the idea that these are depression era recipes? Tongue is still a popular dish in certain areas, chicken necks and turkey necks make great soups. The easy answer might be to find a depression era cookbook, but people in that era didn't have a lot of money to spend on things like cookbooks. They spent it on food, instead.
You might check the microfiche section of your local library and see if they have any copies of old depression-era newspapers. Home makers pages were a popular feature, and had lots of recipes and tips on how to stretch your food dollar.

You could always look in cookbooks from the era. You can probably find some in a used bookstore or on ebay.
