Saute means to add a small amount of vegetable oil, olive oil, margarine to a medium hot frying pan. After the oil is hot (not smoking)add your vegetables, meat or ingredients that you want to saute and basically fry. Other than meat cut into small pieces, other thing should not brown. The oil that you add should be a small amount (usually a tablespoon is more than enough for one skillet of vegetables). Your recipe will usually guide you through this. Hope this helps. Good luck.

All that saute means is to pan fry. Traditional "old school" cooks like Emiril like butter. New "old school" chefs like Puck like olive oil. Find what you like and go for it! Have a great day!
