Hahaha....you can tell most of the people who have answered here don't have a lot of experience (or a clue) with trucks or truck drivers. No, driver's aren't given any kind of meal tickets. They are given a daily allowance/deduction to take off on their taxes. But, that doesn't translate into cash that they can use to go out and buy food on on a daily basis with until after April 15, if they're lucky!!
I am assuming your hubby has some kind of cooler or fridge in the truck. Stocking it with his favorite drinks, milk and juice (v-8 and orange) would be a great idea. He can use the milk for cereal and soup. Fresh fruit is a good idea to have around, as well. An ice chest/fridge will allow him to have foods in the truck for about as long as you'd be able to keep them in the fridge at home. You could get some Tupperware plates and fix him some homemade meals for a few days and he could keep them cold in the cooler until he was able to get to a truckstop and heat them up.
If he's really serious about eating in the truck, he might want to consider getting a converter that he can plug into the cigarette lighter. They cost around $100 at Radio Shack. With one, he can get a small microwave and be able to cook in the truck just as he would at home. It will make his cooking possiblilites nearly endless. He could take water with him and make coffee. He could cook nearly anything in a can. I would definitely suggest getting a converter!!
Be careful with all the canned foods. They are very high in salt!
I've seen drivers that toted small grills on the catwalks of their trucks and would pull into Super Wal-Marts and grab chicken/steaks to grill at rest areas.
If ya'll are creative, you can pull just about anything off!!

meals that will keep in a truck for up to a week? If he doesn't have a refrigerator and a microwave in the truck - then it is a limited list already.
I would avoid beef, chicken, and turkey altogether. Pasta dishes like sphagetti or macaronni & cheese - frozen before he leaves home - then eaten after they thaw might work.
Nuts and berries and fruits are good choices, if you can make a meal from them.
Rice generally keeps pretty well - stir fried rice with cashew nuts, and maybe some vegetable - sounds good.
Chillie, Soup, and most stews will keep well (but I wouldn't risk putting meat in them if he doesn't have refrigeration).
also consider making use of some of the seasonings/flavorings that we use in cooking that also act as preservatives: particularly vinnegar and salt

Unless he has a freezer on board there isn't much you could make him.You could set him with an ice chest full of his favorite drinks and lunch meat.Also you could get a dehydrator to make him dried fruit and meat to eat as a snack.It will would be very cost effective in the long run.
You most be an awesome wife to think about doing this for him.My idea of cooking involves in the microwave and take out.

It might be bests to send him with a big cooler (he can restock the ice) Then you can make things he can microvwave at the gas station, like burritos, lasagne, even breakfast burritos, meatloaf, send some bread and sandwich meat, maybe a roll ofsausage and some cheese- of course vegis already cut up for him.

It depends on what means he has to keep them in his truck.(a fridge, freezer etc) Most truck drivers are given a meal ticket to eat out or reembursed for what they spend at restaurants on the road.

I used to load up my husband with bread, cold cuts, cereal already in a bowl, pudding, chips, (I bought him a refrigerated cooler)jello, pop. I'd make him dinner for the night he left and the next night.

Nothing will actually lasts that long. What you can bake for him is some biscuts and some rusks. On the day that he leaves you can put in for him some sandwitches or meatballs or viennas or something like that.

Try chili or any type of soup. Beef stew, anything that is easily heated. Or you could try shredded beef/pork sandwhiches.
