Sit-ups and crunches alone aren't going trim belly fat. What you need is cardio, cardio, and more cardio along with crunches. Cardio will burn off excess body fat and the crunches will only help to tone your ab muscles, but that's no good if you don't burn the fat.
The bad news for you though is there is no way in a month you'll see the results you want. You will see results just not as extreme as you probably want. When body fat is burned it is burned off in the reverse order of where it was put on. So the longer you've had that gut the longer it's going to take to burn it off.
Here are some helpful tips to reducing belly bloating though. You'd be suprised what kind of results you'll see if you follow this advice along with cardio. Don't chew gum, or drink soda or anything else carbonated and don't drink out of a straw.
For your cardio sessions, you'll want to do 2 30minute sessions a day. Try spacing them out as far as possible too. Make your first session a morning jog after you wake up and make the 2nd 30 minutes of cycling after work.
Another tip, to lose weight you have to have a negative caloric intake. I know you said that you already woirk out 3 times a week and try to eat healthy, but you're going to need to do one of the following either eat less or work out more or for the really extreme eat less and work out more. You're only 115 pounds so I wouldn't go really extreme with this especially if you're only looking to trim belly fat but it will help with getting your entire body tone. The less about of body fat the more muscle will show.
And finally...when you're exercising or trying to lose body fat you have to look at the body as whole not separate entities. Because endless crunches are not going to give you a flat stomach. It will stengthen the abs muscles that are hidden under tubs of fat. Really just focus on cardio and getting your whole body into shape and it will all come

I am also 26, 115 pounds and work out 3 times a week!! I suggest cardio only. Once you lose the fat THEN do ab exercises. The only thing that will burn off the fat quickly is cardio. Try to do it more than 3 times a week, as least until your Miami trip is over. Also, eat healthy. Lots of fiber and protein. Fiber one cereal is good for breakfast or Kashi Go Lean Crunch. Have a turkey sandwich for lunch on whole wheat bread and fruit for a side. South Beach Diet cookies and crackers are good too. It works for me!!! And I live in North Miami :)

Steve W is right. Crunches/situps are vital if you're specifically trying to tone your stomach, but you'll never get rid of all of it (the lower part around your belt line) unless you work the stomach in the opposite direction. You can do this with leg lifts either from the ground or vertically on some form of exercise machine.
If you're serious about it, I highly recommend pilates. You don't need a class or anything, just pick up a DVD and follow along with it for about 20 minutes a day. Doesn't take too long to have a noticeable effect.

Running is good but you will tire quickly and that's not good for real cardio benefit. If you job, at a good pace, and keep your heart rate up, that assist your metabolism.
Aerobic workouts are good but the main thing is to keep your heart rate up for as long a period possible. You need to also do sit-ups to strengthen the muscle under the skin, toning any soft parts..
Diet plays a HUGE role and you need to eat a high carb-low salt-low fat-food style.
In conjunction with exercise (proper and not just 2 minutes) and a good diet, you will have that sexy gut probably before you leave for Miami.

You don't say how tall you are, but 115 pounds is on the light side for most girls. My guess is that you have a tiny little bit of skin there, and you're self-conscious about it, but that there really isn't much fat on you. I'll go out on a limb and wager that the only thing keeping you from being totally hot is your own anxiety.
Relax. Enjoy yourself. Smile. Life is no fun if you're always worrying about it.

Toning the stomach muscles is best achieved using common, basic exercises, such as crunches, sit ups and side bends. Or simple stomach exercises that you can work harder on at every workout. Once the stomach is toned it may be necessary to lose fat around the stomach area so your new, firm stomach muscles can be clearly seen. Try this site

Sounds like you just need to tone up...
Cardio daily (at least 30 min) is a must. The best toning exercise I've found is pilates. If done 2-3 times per week, you'll notice results fairly fast.
Also, cut out all soda (yes, even diet) and drink lots of water. It helps!

Work on the abs. As stated sit ups and walking. Park car as far from store doors or office as possible. No more convenience stops near the door. Stop soft drinks and drink only water.
