A couple in our unit had a miscarriage and I was asked to bring them dinner tomorrow night. I just need some good ideas as to what to bring since I don't know them at all. I'd like it to be something pretty easy also since I've got my own family to cook for as well.

Beer Batter Chicken Fingers

1 cup flour
1 cup beer
1/2 cup water
1 egg yolk
1 egg white, beaten until stiff
2 chicken breasts, skinless, boneless, cut into large strips
1/4 teaspoon salt
2 tablespoons Worcestershire sauce
2 tablespoons your favorite hot sauce
peanut oil (for deep frying)

Mix together flour and salt. Add the beer. Using a whisk, mix well
and then add water and mix until smooth. Add the egg yolk and mix well. Add the beaten egg white and mix well. Place into refrigerator for at least 2 hours.Mix the Worcestershire sauce and hot sauce together and add chicken strips. Allow chicken to marinate for at least 10 minutes. Roll chicken in your batter. Deep fry until golden brown, then drain on a paper towel. Serve with your favorite dipping sauce. Beer Batter Chicken Fingers 7

GARLIC-ROASTED NEW POTATO SALAD
(Serves 8 to 10)

Five pounds small red new potatoes
Six cloves fresh garlic, cleaned and finely diced
One and one-half cups chopped red bell pepper
Two cups of mayonnaise, preferably Hellman's brand
One and one-half cups sour cream
Three tablespoons minced parsley
One-half cup chopped scallions
One teaspoon sea salt
Pepper to taste

Wash the red potatoes. Bring to a boil in salted water until tender,
about 15 minutes.

Cool, then cut into one-inch chunks.

In a large bowl, combine mayonnaise, sour cream, garlic, parsley,
scallions, red pepper. Mix well.

This dressing should be smooth. Gently fold in the potatoes.

Season with the salt and pepper to taste.

Refrigerate for 60 minutes before serving.

1 11 oz. can mandarin oranges -- drained
1 cup JET-PUFFED® Miniature Marshmallows
1 cup flaked coconut
2 bananas -- thinly sliced
2/3 cup Nestle® Carnation® Evaporated Milk
1 cup sliced fresh strawberries -- optional

Combine fruit cocktail, oranges, marshmallows, coconut, bananas, and
evaporated milk in large bowl. Let chill 30 minutes. Stir in strawberries, if
desired, before serving.

I'm sorry to hear that. I would suggest bringing them a casserole. I'm from the South and that's what we always seem to bring people for most everything. They're pretty easy to make and easy on the prep and cook time. I would highly recommend you check out http://www.allrecipes.com. They have tons of recipes that are rated and reviewed by normal, average people, and you can search by ingredients. That'll make it easier if you have something on hand, like some ground beef, that you could use in a recipe.

Go with something that is easily heated, re-heated, and frozen. I would recommend a lasagna, casserole, homemade mac & cheese with some ham or veggies in it. Or, since it is summer and hot out (well, someplaces its hot!), you could make a big bowl of taco salad or some other "meal" salad. Be sure to add a loaf of fresh french/italian bread.

It is very kind of you to do this for a family that you don't know.

Fettuccine Alfredo
So much flavor from such a simple sauce. This classic Alfredo made of butter, cream and Parmesan cheese is perfect for fettuccine.

8ounces uncooked fettuccine
1/2cup butter or margarine
1/2cup whipping (heavy) cream
3/4cup grated Parmesan cheese
1/2teaspoon salt
1/8teaspoon pepper
Chopped fresh parsley


1 . Cook fettuccine as directed on package.
2 . While fettuccine is cooking, heat butter and whipping cream in 2-quart saucepan over low heat, stirring constantly, until butter is melted. Stir in cheese, salt and pepper.
3 . Drain fettuccine. Pour sauce over fettuccine; stir until fettuccine is well coated. Sprinkle with parsley.

Just make the same thing you are planning for your family only double the quantity. I'm sure they will enjoy anything you take them.

Something they can easily heat up again, such as casserole or stew or lasagna?
