Because they don't understand it, and they've been told by people they see as being authorities on the subject (parents, pastors, etc) that it's a wrong way of thinking about things. Never mind that monotheism makes just as little sense as polytheism, and that it doesn't answer where ANY of the deities came from/what they might really be, but it makes them feel better. And goodness knows they can't examine WHY they believe in monotheism instead of polytheism because then they might doubt. Don't need any doubters in monotheism; that's not the way it's supposed to be.

I don't think they necessarily do. It's just that it's what they believe, and therefore, they don't believe polytheism to be accurate.
My personal beliefs make me a monotheist, but I can see the value in cultures where people are polytheist. It's just not what I believe.

Just imagine a company with 1 boss and a company with 5 bosses. Bosses have their own view and decision. So, rules and regulation will be not rigid. May be this month employee needed to follow the instruction of boss A, but contradict with boss B or C.
One God, to show that he has absolute power and authority to create law and what is more important is to rule the universe. God must have this kind of absolute power and no one can be compared with him.
If there is many gods, how can we say these gods have absolute power? May be other god having more power than your favorite god. So, can we say that he is god? God who can be destroy by another god, or less powerful that all god?
So, can we say they are gods?

Because their mommy and daddy tell them it is so. They don't analyze their own beliefs until they find what is right for them. They simply go with what they were taught.
