fry them over medium low heat with margarin, not butter(butter will scorch) with a little salt and pepper and onions.

Wash them, wipe them down with paper kitchen towel, slice them, then fry them in cooking oil until they've started going brown.... remove from cooking oil with slotted spoon, and tip 'em out onto another piece of paper kitchen towel to drain the excess oil off.
Skip bit with the slotted spoon if doing them as part of a stir fry..... add onions / garlic, then the mushrooms..... then when they've gone brown, add everything else.

baked stuffed mushrooms:
get some large open cap mushrooms, wash and remove the stalk. place some brie, pine nuts,dry bread crumbs, your fav herbs and a tiny splash of cream in a food processor and blitz to a sticky pulp, fill the mushrooms with this and place in a hot oven for 20-25mins goes great with sweet and sour noodles, bon appitite

It depends on your personal taste... I prefer to lightly fry mushrooms in butter for about 2 minutes. They don't need much cooking.

Make sure they are dry - they have a LOT of moisture, then slice thinly and saute with onions a garlic & enjoy!
