The reason is because the Video CD format is a highly compressed format. It is called a lossy compression where you loose image information a lot. Think if an 8.4GB DVD can hold maximum of 2 hours video of high quality, how can a CD 700MB can hold maximum 80mins video.

Solution:
If you buy a software called Pinnacle Studio DV (latest version), you can capture video from almost every camcorder without having to install camcorder software or drivers, this capture is uncompressed so you don't loose quality at all. Then you can burn high quality DVDs or after editing video you can also record it back to the camcorder provided your camcorder has DV or analog input. This pinnacle software costs £50
