cheddar will melt fast

try this

CHEDDAR CHEESE FONDUE

1/4 c. butter
1/4 c. flour
2 c. milk
1/2 tsp. salt
Dash pepper
1/2 tsp. garlic powder
1/4 c. sliced green onion
2 1/2 c. Wisconsin sharp Cheddar cheese

Shred the cheese and set aside. With the butter, flour, milk, salt and pepper, make your white sauce. Now add the green onion and cheese, stirring until the cheese is melted. Serve in a fondue pot, with a low flame under it, or another vessel so as to keep the fondue hot. With fondue forks, dip chunks of crusty bread in it.

butterkase, swiss ementaller, and cheddar are all good in fondue. You have to remember to add a liquid (beer, cream) to help in the melting.
