Rachael Ray's Five minute fudge is easy & delicious.
Five Minute Fudge
1 -12 oz bag semisweet chocolate chips
9oz-(3/4 of a 12 oz bag) butterscotch chips
1-14 oz can condensed milk
1- tsp vanilla extract
8-ozpecan pieces
8 -inch cake pan greased with butter
Put chips and milk in pot on med heat. Stir until chips are melted and mixture is combined. Stir in vanilla remove from heat stir in nuts and immediately pile into cake pan leveling quickly with spatula. Chill an hour or two in refrigerator.

That depends upon what you mean by easy. You can make fudge pretty well without many steps, but the recipe I have takes time. Some of the recipes you will find out there are done in the microwave. That's fine, but you should know that these are faux-fudges, not true fudge.
Here's the recipe of my culinary hero, Alton Brown. Take a look, and I'll give you some of my personal experiences with it at the end.
2 3/4 cups sugar
4 ounces unsweetened chocolate
3 tablespoons butter, plus more for greasing pan
1 cup half-and-half
1 tablespoon corn syrup
1 tablespoon vanilla extract
1 cup chopped, roasted nuts, optional
Grease an 8 by 8-inch pan with butter. In a heavy-bottomed saucepan, combine the sugar, chocolate, 1 1/2 tablespoons of the butter, half-and-half, and corn syrup. Over medium heat, stir with a wooden spoon until sugar is dissolved and chocolate is melted. Increase heat and bring to a boil. Reduce heat to medium-low, cover, and boil for 3 minutes. Remove the cover and attach a candy thermometer to the pot. Cook until the thermometer reads 234 degrees F. Remove from the heat and add the remaining butter. Do not stir. Let the mixture cool for 10 minutes or until it drops to 130 degrees F. Add vanilla and nuts, if desired, and mix until well-blended and the shiny texture becomes matte. Pour into the prepared pan. Let sit in cool dry area until firm. Cut into 1-inch pieces and store in an airtight container for up to a week.
First off, when the recipe says 4 ounces of chocolate, it means real chocolate. Preferably dark chocolate. Not semi-sweet morsels! This is important, because semi-sweet chocolate chips have more milk. That throws off your cream/fat ratio, and that's not good eats. Secondly, when the recipe says "do not stir", it means it. If you do, you are on the road to bad fudge, because stirring equals crystalization. In your fudge, you have a lot of sugar crystals, and the fudge is just saturated with it. If they bump into each other, they will clump, and that makes a big pot of crunchy, gritty, nasty stuff, not fudge. In fact, don't just abstain from stirring. Don't bump the pan, don't slosh the liquid. Just leave it alone.

4 1/2 cups sugar
2 Tablespoons flour
1 stick butter
1 large can evaporated milk
Mix together in a medium sized pan. Cook on medium heat until it comes to a boil. Boil for 10 minutes and remove from fire. Add the following: 1-8ounce jar of marshmellow creme 2 or 3 packages of chocolate chips {2 for light colored fudge 3 for dark fudge} 2 1/2 cups chopped pecans Mix well together and pour into buttered cookie sheets. Let cool completely before cutting.

Depends peanut butter fudge you just need peanut butter milk and powdered sugar same with chocolate except substitute PB with melted chocolate its like 2 cups of powdered sugar 1 cup of PB or chocolate and 1/2 cup of milk... heat it all up together in a saucepan and then put it on a buttered cookie sheet or cake pan and viola you have fudge..know it works that way made it all the time like that, very quick and simple.

Peanut Butter Fudge
2 cups sugar
1 - 2 tbsp peanut butter
1/2 cup milk
Boil for 5 min.
Take off and stir and pour into a buttered dish.
Easy Fudge
1 1/2 sticks butter
3 cups sugar
2/3 cup canned milk
12 oz semi sweet chocolate chips
7 oz marshmallow creme
1 cup nuts (optional)
1 tsp vanilla
Mix butter, sugar, and milk; bring to a full boil stirring constantly. Boil for 5 min over medium heat stirring constantly. Remove from heat. Gradually add chips, stirring til melted. Add remaining ingredients. Mix well. Pour into a greased 9 inch or 9x13in pan. Cool to room temp.

Depends on what sort you want...My absolute fave is Russian Fudge it just melts in your mouth...mmmmm yummy. You could just google the recipe, I only have it in metric measurements as I am a New Zealander so don't know what all the conversions are for you...If you try it I hope you like it, have some for me too ;0)

Microwave Fudge........YAYYYYYYYYYYYYY.....Easy INGREDIENTS:
3 2/3 cups confectioners' sugar
1/2 cup cocoa
1/4 cup milk
1/2 cup butter
1 tablespoon vanilla
1/2 cup chopped pecans, optional
PREPARATION:
Combine and cook confectioners' sugar, cocoa, milk, and butter on high power until butter is melted, about 2 to 3 minutes. Stir until smooth. Blend in vanilla and pecans. Spread into a buttered 8-inch square pan. Refrigerate.

DIRECTIONS:
1. Place chocolate chips, sweetened condensed milk, and butter or margarine in large microwaveable bowl. Zap in microwave on medium until chips are melted, about 3-5 minute, stirring once or twice during cooking. Stir in nuts, if desired.
2. Pour into well-greased 8x8-inch glass baking dish. Refrigerate until set.

Chocolate Mint Candy (Fudge)
Prep Time: 30 mins
Total Time: 30 mins
Servings: 64
Ingredients
2 cups semi-sweet chocolate chips ( 12 ounces)
1 (14 ounce) cans sweetened condensed milk, divided
2 teaspoons vanilla extract
6 ounces white candy coating ( see note above)
2 -3 teaspoons peppermint extract
3 drops green food coloring
Directions
In a heavy saucepan, melt chocolate chips with 1 cup milk.
Remove from the heat; stir in vanilla.
Spread half into a waxed paper-lined 8-in. square pan; (I personally prefer to line the pan with foil and grease the foil with butter) chill for 10 minutes or until firm.
Meanwhile, in a heavy saucepan over low heat, cook and stir candy coating with remaining milk until coating is melted and mixture is smooth.
Stir in peppermint extract and food coloring.
Spread over bottom layer; chill for 10 minutes or until firm.
Warm remaining chocolate mixture if necessary; spread over mint layer.
Chill for 2 hours or until firm.
Remove from pan; cut into 1-in. squares.
Hot Fudge Sauce - Microwave
Prep Time: 10 mins
Total Time: 13 mins
Serves: 4, Yield: 1 pint
Ingredients
2 tablespoons margarine, melted
1/3 cup cocoa ( Hershey's)
1 (14 ounce) cans sweetened condensed milk
2 tablespoons water
1 teaspoon vanilla
Directions
In a microwave proof bowl, combine margarine, water and cocoa.
With wire whisk, blend in condensed milk.
Microwave on high 1 minute then whisk to blend.
Microwave 1 1/2 minutes more on high. Add vanilla and blend with whisk completely.
Serve over your favorite ice cream.
Store in 1 pint canning jar, cool and refrigerate.
Can be rewarmed in jar (lid removed) in microwave--add a bit of water if it thickens too much.
