Depends on whether you're cooking lamb chops or a roast. For lamb chops, I love them rubbed with garlic and rosemary, then cooked over high heat on the grill, but not too much - medium rare is just fine. For a leg of lamb, slow roasting in the oven is best. You should use a meat thermometer to make sure the temperature reaches about 160 degrees in the thickest part - about 20 minutes a pound at 325 should do it.
