The cut plant or flower in the vase absorbs only a little, the rest is due to normal evaporation.

evaporation. The dryer and warmer the room is, the faster the water will disappear. Also, I have a cat that likes to drink the vase water, so if you have a cat, you might want to check it out. :)

The water evaporates into the air, and if there are flowers in the vase, they use it up as well.

Its a process called evaporation. Its one of the steps of whats called the "water cycle"...heat turns water into vapor, and this vapor floats into the air. You can see this at a much higher speed when you watch boiling water.
Evaporation turns into condensation, which is when water vapor bonds together, typically to form clouds. Clouds are large clusters of water vapor
Condensation then produces precipitation, which is usually in the form of rain.
And of course, the whole cycle starts over again when the rain, which is now in puddles, is evaporated into the air...

actually, there are two answers to this question 1. evaporation of the water as would be normal with any standing water(mud puddles, rain water, etc. 2. The flowers actually take up the water in their stems and it goes to the flowers and from there it transpires to the air.
I hope this helps.

it depends upon humidity. i mean when you put water on a vase and keep it like that if humidity [ concentration of water in air] is less then it gets evaporated quickly. but if the humidity is more it takes time. for example if you wash cloth in rainy season it takes more time to get dry.
