Croutons are not stale bread. They are toasted/baked bits of bread with seasoning. If they were not in an air-tight package, they would become stale and somewhat soggy. Then they would lose their great flavor and crunchiness.

i think the reason is that if it's exposed to air, it will become soft even if it's stale bread
cause the air always has a little bit amount of water, right? even just a little bit can make the bread become soft

Like some peoples brains..they are EMACIATED...void of moisture and substance. If the bag is opened then the flavor tight seal is broken letting in foul flavors, moisture and whatever nasties a dry lil crisp might attract...has anyone opened your bag lately?!? RAJA

Because the spices and oils aren't stale, and they would lose their flavor quickly otherwise.
