cups are for volume scales are for pounds.
However 2 cups of water ( 1 pint) = 1 lb of water.
take a ruler and and pencil. put the pencil under the middlw of the ruler. put 2 identical containers on the ruler at equally spaced dosutances fromt he center.
fill one with 2 cups water, fill the other with coconut until they are somewhat balanced.
Or, just read the friggen coconut package and go by the weight on the label

Well, there are 8 ounces in a cup and 16 ounces to a pound.
So I would guess 2 cups! If nothing else just go by the ounces
on the bag that it comes in!

Check the weight of the container your coconut came in because volume and weight are not necessarily the same when cooking. 16 oz equal one pound. One cup is eight oz ut the volume of waht you put in the cup may not equal out.

16 oz. is a pound (that's for weight)
2 cups is probably about what you need though ... pack as much coconut into the measuring cup as possible, though
