It is a sign of returning guests. If, in Jewish culture, a guest throw his napkin on his plate, he was never coming back. If he neatly folded his nakin and gently placed it on his plate, he was planing on returning. It was Christ's way of saying He was going to return. It also helped prove that no one stole Jesus body. If some one had stolen Him, they wouldn't have taken time to fold the headpeice.

I personally believe that the headpiece was folded to reflect that Jesus had indeed risen and was able to physically handle material in his new glorified body to prove it!

I assume you refer to John 20:7. Maybe to show He was in no real hurry to leave. Also, this would show it was not a random grave robbery, as, the cloth would have just been thrown.
